Red as per tradition, controlled denomination of origin by will and stubbornness, organic by choice. The name of our red wine "Cosmì" derives from an unintentional mispronunciation of the name of Cosimina, Cosimo's wife. It is obtained from black grapes from indigenous grape varieties. The Gaglioppo, Greco Nero and Calabrese Nero vines are grown exclusively on the estate, strictly using the method of organic farming, and vinified with the help of protocol staff.
Serve at room temperature (about 18-20 degrees) after decanting the product for at least half an hour. Cosmì is a tannic wine at the right point, it releases strength and intensity from the first sip and embraces the palate with its persistent taste.
Soil composition Limy, clayey. Training system: counter-espalier with guyot and cordon spur pruning. Planting density 5000 vines per hectare. Age of vines 20 years Yield per hectare 60 q.li/ ha Average production per plant 1 kg. Harvest period first ten days of October. Alcohol 14% Classic Bordeaux bottle format.
Fermentation: 8/10 days in maceration Aging: steel and bottle.
Color Intense red, garnet Nose, notes of ripe red fruit, Taste Full-bodied, slightly tannic. Serving temperature 20°.
Food pairing: Mediterranean first courses, savoury meats, cold cuts, mature and spicy cheeses.
