White eating is an ancient sweet and savory preparation made with strictly white ingredients, to which it is difficult to attribute with certainty an Italian or French paternity the term appears as: Blasmangeri and indicates a dish made with rice, milk, sugar, cloves and capon fillets. The Sicilian recipe has Arab origins. Although it is a dessert prepared throughout the island, the oldest version originates in the area of Modica and Ragusa where it is made with milk from almonds and honey from the Iblei mountains, scented with cinnamon and citrus peel and decorated with Sicilian pistachios.
