Olivette of Sant'Agata
Olivette di Sant'Agata are small and graceful, the size of a puff of air. Appetizing like breakfast in the countryside on a spring morning and green like imperious life. Glossy as the first tear of joy. Small sweets made of almond paste, scented with rum and coloured with pistachio green. Prepared in Catania between January and February to celebrate the most important festival, that of Sant'Agata, patron saint of the city. The shape of olive wants to remember a miracle occurred during the life of Aituzza affectionately Sant'Agata.
Almond flour, sugar, water, vanilla, green food coloring, rum or maraschino or strega liquor, granulated sugar.
