Ingredients for 4 people:
- fish of various qualities: 2 kg
- peeled tomatoes: 250 g
- slices of homemade bread
- 1 glass of red wine
- 3 cloves of garlic
- chilli pepper: 1
- parsley, oil, salt and black pepper to taste.

Put the oil and the garlic in a pan, brown the crushed dressed garlic and the chopped parsley and chili pepper. When it is barely colored, add the wine and let it evaporate, then add the peeled tomatoes, let it boil a few minutes and then add the water and cook for about 15 minutes. Before adding, the fish remove the garlic cloves. Choose the fish and place them in the pan gradually according to their cooking time: first those that cook in more time and gradually those that cook in less time. Season with salt and pepper in moderation. When they are cooked, remove the bones from the fish and, together with the broth, place them on the plates where you have already placed the toasted bread slices.
