Ingredients for 4 people:
- durum wheat semolina: 500 g
- water: as needed.

Make a well in the flour on the pastry board,
and pour in some water and salt. Work the dough for a long time and then divide it into three parts, and with a rolling pin, roll out the sheets not very thin. When they are quite dry, fold them over several times to form a roll and cut into moderately wide strips. Cook in abundant salted water and dress with the sauce you prefer or with previously cooked legumes (chickpeas, beans, etc.).
