Ingredients for 4 people:
- Semolina of durum wheat: 600 g
- Water: q.b.
- Oil: 1 tablespoon
- Salt: a pinch

Mix the semolina with the water, oil and salt and knead it for a long time. At this point, form sticks of 2 cm and rub them with your finger or on a ribbed surface or on the prongs of a fork, to form the gnocchetti. Cook them in abundant salted water and season with a good meat sauce and pecorino cheese.

This dish is very ancient, dating back to the time of Magna Graecia.
