SHOULDER OF LAMB WITH PECORINO CHEESE

Ingredients for 4 people:
- 1 shoulder of lamb
- fresh pecorino cheese: 300 g
- ½ glass of white wine,
rosemary, oil, salt,
pepper to taste.

De-bone the shoulder, open the meat and put the sliced pecorino cheese, rosemary and oil on top. Roll up the meat, bind it, salt moderately, place it in a baking dish, sprinkle with oil and bake at 200 degrees for 90 minutes. During cooking add ½ glass of white wine and turn.
