SAUTÉED PORK

    Ingredients for 4 people:
    - lean pork meat: 800 g
    - fresh bacon cubes: 200 g
    - liver, heart, and lung: 1 kg
    - red wine: 1 glass
    - large onions: 2
    - some ripe tomatoes
    - salt: to taste.
    - red chili pepper to taste.

    First blanch the lung cut into pieces, then cut up the liver, heart, meat, bacon and put everything together in a pan; add the chopped onions, salt and let it fry over moderate heat.
    When everything is well browned, add the wine, stir and let it evaporate, at this point add the chili pepper and the tomatoes; finish cooking and serve hot.
