SERPENTONE

    Ingredients:
    - almonds: 400 g
    - sugar: 400 g
    - eggs: 2
    - grated rind of a lemon

    Peel the almonds and chop them, add them to the sugar, two egg whites whipped to stiff peaks and the grated rind of the lemon, mix everything together.
    On a sheet of baking paper, greased with a little 'oil, form a snake with the almond paste, put it in the pan, brush with egg yolk and bake at 180 degrees for about 30 minutes.
