Ingredients for 4 people:
- sardines: 1 kg
- vinegar: 2 dl
- garlic: 4 cloves
- black peppercorns:(8-10 grains)
- flour
- mint leaves
- salt: to taste.
Clean the sardines, flour them and fry them. Place them in a ceramic container, add salt and fresh mint leaves. Throw away the oil used to fry the sardines from the frying pan and put in some more, add the crushed garlic cloves and when the oil heats up and you can smell the garlic, add the vinegar, the black peppercorns, a pinch of salt and let it boil for 5 minutes over a moderate flame. Then pour the liquid over the sardines and let them cool, cover and put in the fridge.
Prepared in this way they will keep for several days.
