The best quarter of lamb for roasting includes the leg and half of the kidney up to the first ribs. After washing and drying it well, sprinkle it generously with salt, pepper and lard. Place it in a roasting pan and simply roast it in a very hot oven for about 45 minutes (provided it is a milk animal).
