Cicerchia alla Calabrese

Calabrian Style Cicerchia

Ingredients for 4 people:

- chickling vetch: 600 g
- 1 onion of Tropea
- 4 peppers of medium size roasted
- extra virgin olive oil
- croutons of bread
- salt and black pepper to taste

Soak the chickling vetch for 12 hours with two tablespoons of salt and a pinch of bicarbonate in cold water. In the morning wash it well, put it in the pot well covered with water with a cot of celery and cook slowly. Roast, peel and season the peppers with oil and salt. Prepare the croutons of homemade bread and bake them in the oven. When the chickling vetch is cooked, season and serve with the croutons and peppers.
