Goat meat boiled peasant style

    Ingredients for 4 people:
    - goat meat: 2 kg
    - red onions of Tropea: 500 g
    - a rib of celery
    - parsley
    - 1 bay leaf
    - 2 cloves of garlic
    - ripe tomatoes: 4
    - black peppercorns: about 10
    - salt to taste

    Put a pot with water on the fire;
    when it boils put the meat in it and let it boil for 3-4 minutes. After this time, remove the meat from the pot and wash it under the tap. Once this operation is finished, place it in the pan where it is to cook, chop the onions coarsely and add them to the meat together with the other herbs, black pepper, tomatoes and salt; cover generously with water and leave to cook over low heat. If during cooking there is a lack of water, add more boiling water. When cooked, remove the meat and keep warm. Drain the broth and cook the ditalone pasta in it, serving it with plenty of grated pecorino cheese.
