Kid in white

    Ingredients for 4 people:

    - kid: 1,500 kg
    - 1 large Tropea onion
    - half a glass of olive oil
    - salt to taste
    - two leaves of parsley
    - a sprinkling of ground black pepper
    - 2 glasses of wine.

    Wash in the wine and dry well the pieces of kid and put it to brown in a pan; when it is well browned, add the chopped onion and stir continuously until it becomes transparent. At this point, cover the meat with boiling water, then add salt, black pepper and parsley and let it cook over low heat. With the sauce you can dress the spaghetti, sprinkling them with plenty of grated local pecorino cheese.
