Capretto al forno

Roast kid

Ingredients for 4 people:
- kid 1.500 kg
- dry white wine: half a liter
- oil: half a glass
- 2 big onions of Tropea
- 5 peeled tomatoes
- 4 leaves of sage
- black pepper: gr 6

Cut the kid in pieces and put it in a ceramic container with wine and leave it for about 30 minutes. In the meantime, clean the onions and chop them coarsely, peel the tomatoes and cut them into pieces, wash the sage.
Remove the kid from the wine, squeeze it and fry it in a pan, place it in a baking dish, add the onion and tomatoes, salt and pepper, season with olive oil, place the sage between the meat and bake at 200°. Halfway through cooking, turn the pieces and put them back in the oven for another hour.
If you wish, you can add potatoes cut into large pieces.
