Goat of Calabria cooked with tomato ragout

Ingredients for four people:
- goat meat: 1,500 kg
- ripe tomatoes: 1 kg
- dry white wine: 4 glasses
- oil: 1 glass
- 1 large onion
- 2 stalks of celery
- 1 bay leaf
- 7 whole black peppercorns
- salt to taste


Pour the wine over the meat cut into pieces and leave to marinate for an hour. After this time, remove the meat from the wine, squeeze it and brown it in a pan, then pour it into the pan where it should cook with all the oil, add the finely chopped onion and celery, let it brown and add the tomato puree, bay leaf, black peppercorns and salt. Cover and cook over low heat; add hot water if necessary. When cooked, remove the meat and use the sauce to dress macaroni or other types of pasta.
