Buffeddhi of Magna Graecia

    Ingredients:
    - sweet potatoes: 2kg
    - honey: 400 g
    - a pinch of cinnamon powder
    - flour: 600 g
    - sugar: 3 heaped tablespoons
    - lard: 2 tablespoons
    - white wine: 2 glasses

    Boil the potatoes, peel them and mash them with a masher, add the honey and cinnamon, mix with a wooden spoon to mix well the ingredients, cover and let cool. In the meantime, make a well in the flour on the pastry board, add sugar, lard, wine and knead, in case the dough is too hard, soften it with some water and continue to work until it becomes soft and smooth. Take a piece of dough and with the rolling pin roll out a thin sheet, take a spoonful of filling, place it in a corner of the sheet, cover it and cut it like a big ravioli, proceed in this way until the dough and the filling are used up. When the "buffeddhi" are all ready, fry them in a pan with high sides, in abundant oil, let them drain and serve them cold.
