Alici Ripiene alla Calabrese

Stuffed Anchovies Calabrian Style

Ingredients for four persons:
- anchovies: 1 kg
- bread crumbs: 300 g
- grated cheese: 100 g
- red chili pepper, garlic, parsley, black pepper, salt, oil, a handful of capers
- 500 g of ripe tomatoes.

Clean the anchovies removing head and bone and wash them. Prepare the breadcrumbs with the cheese, parsley, finely chopped garlic, black pepper and capers. Put a small handful of this mixture on each anchovy, roll it up and secure it with a toothpick.
Add red pepper.
When they are all ready, cook them for 20 minutes in the tomato sauce prepared earlier and serve hot.
