Vincotto - Figs
Fig Vincotto aged in wooden barrels is a very versatile sweet and sour condiment. It can be used on roasted meats, carpaccio, roasted fish, soups or stews, cheeses (parmesan), sorbets, fruit salads, ice cream, desserts in general. Even boiled meats take on a richer flavour with a little Vincotto ai fichi. Similar to a balsamic vinegar, the product comes from the prestigious vines of Negroamaro and Malvasia and through successive passages in wooden barrels with the addition of figs.
