Spicy Calabrian Ventricina
Ventricina refers to the product prepared with the mixture of meat, chopped into medium pieces, obtained from the shoulder of pigs, with well-chosen fat obtained from the lard of the front part of the loin, near the capocollo, salt and sweet and hot chilli pepper sauce. The shape is similar to a cylindrical figure, with an average length of about 50 cm and a diameter of about 10 cm. The seasoning of the Calabrian Ventricina is done in its natural state for forty-five days. Typical of many Italian regions, we propose the spicy Calabrian one.
