Pure Bergamot Juice
The bergamot of Reggio Calabria, produced on an organic farm located in the territory of Reggio Calabria. Given the concentration of 100% pure bergamot, this product is energetic, invigorating, used as an aroma for food or for gourmet marinades, diluted you get a unique drink of its kind, ideal as a base for summer cocktails, aperitifs, sorbets, for fruit slush or used as a base for traditional pastries. In case of therapeutic use, it is absolutely necessary to consult your doctor before combining or replacing it with medicines.

suggestion: Anchovies marinated in bergamot . Wash and clean the anchovies, remove the head, the bone and the entrails, rinse them well under running water and dry them. Prepare the marinade by emulsifying the oil, 2 or 3 tablespoons of bergamot juice, the juice of 1 lemon, the finely chopped garlic or cut into very thin slices (so that you can remove it if you don't like eating it), the chopped parsley and a pinch of salt. Pour on the bottom of a container a few tablespoons of the marinade (given the presence of lemon and bergamot is preferable to use a plastic container or glass, avoiding those of aluminum or copper that would be attacked by the acid of citrus. Form a first layer of anchovies, cover them with plenty of marinade and continue until you finish the anchovies, which you will cover on the surface with the remaining marinade. Leave to marinate for at least 10/12 hours or even 24. After the necessary time, the anchovies will be bleached because they are "cooked" by the juice of the citrus fruits, so you can move them to another container, in order to eliminate the excess liquid and serve them as a second course or appetizer.
