In Calabria, rye bread is known as jurmano bread, it is a black bread, not very dimpled. It is an ancient and poor bread, in fact it was part of the diet of the less wealthy classes, those who could not afford soft white bread.
In dialect, rye flour is called Jurmanu, that is Germanic, and from this it could be thought that rye flour was brought to Italy, especially in the South, by the Germanic dominations.
Jurmano bread has a low glycemic index, is excellent for health, uses sourdough and above all is delicious in its classic "spoon" shape.

If well stored for its own characteristics the bread lasts up to 10 days.
