One of the best wines of Calabria, award-winning and internationally recognized is the Nerone di Calabria, an exceptional wine produced in bland with grapes of Nerello Calabrese 70% and 30% Sangiovese. All these grapes are grown and selected on the steep and sunny hills of Calabria at about 600-800 meters above sea level. The harvest arrives late in order to obtain the maximum of the aromatic concentration, the wine is fermented with a passage in oak barrels for about 96 hours. In this way we obtain a wine of the strong and decisive gradation of 14 degrees, with a total acidity of 7 gr/litre, a ph of 3.3. and very low volatile acidity, 0.4 gr/litre. It has a deep ruby red colour, very intense, difficult to see through if not observed with reflected light, with elegant, noble and compact tannins. The Nerone of Calabria challenges very demanding palates fully satisfying them especially if combined with red meats, grilled, spicy and not, sauces, meats and cheeses. Oxygenating it you feel intense and persistent vinous scents, very spicy. regarding the possible gastronomic combinations, the Nerone accompanies the typical dishes of Calabrian cuisine, red meat, spicy, game, game and mature cheeses. A successful experiment: the Nerone risotto made with Vialone nano rice, IGP Tropea onion, butter, extra virgin olive oil from Calabria, grated seasoned Pecorino d' Aspromonte cheese, meat broth and Nerone di Calabria.
