Cannellini beans are dried legumes cultivated in a natural way, without the use of chemicals, processed entirely by hand and respecting the rhythms of the seasons. They are pinkish-white legumes with an elongated shape, and once cooked they are very soft and easy to work with. Beans with the eye are practically free of fats and cholesterol and are naturally rich in vegetable proteins, carbohydrates, fibres, glucodrine (a substance able to reduce glycaemia), lecithin (which contributes to the rapid emulsification of fats), mineral salts (especially calcium, phosphorus and zinc), vitamins (especially group B). Once cooked, dried cannellini beans are very soft and easy to work with: they are excellent for preparing appetizers, soups, side dishes, mashed potatoes, salads and main courses. Before cooking it is advisable to subject them to rehydration, leaving them to soak in warm water for about 6 hours. They should be stored in tightly closed containers in a dark, cool and dry place, away from heat sources. To be consumed preferably within 3 years from the date of packaging.
