Capocollo Azze Anca the Culatello Grecanico Calabrese Slow Food Presidium
Unique capicollo produced from the thigh in calabria, for this slowfood presidium.
Produced according to ancient Grecanica Calabrian tradition from black pig of Calabria. Thanks to its rusticity, the black pig can be raised outdoors throughout the year and is very well suited to any type of food. In particular, the farm realizes a closed chain, producing directly inside the farm the fodder dedicated to its animals.
The breed is slow-growing and is generally slaughtered after 14 months of rearing.
The meat of black pigs reared in the open air has a significantly higher content of monounsaturated and polyunsaturated fatty acids of the omega-3 and omega-6 series
than that of farm breeds.
The product is naturally seasoned, lightly smoked, with aromas of fennel and Aspromonte black pepper.
Shelf life 12 months, also delivered vacuum packed. Weighs about 1.8 kg.
