English Cheddar cheese, with its characteristic colour ranging from yellow to orange, originates from the County of Somerset in Great Britain and is now protected by a registered designation of origin and is famous throughout the world. It is a semi-cooked, hard cheese made of cow's milk, also called the cheese of a thousand shapes because a wheel can weigh from 1 kg to 60 kg. In England and America it is an ingredient of toasts, sandwiches, salads, or gratins, while in our gastronomic tradition Cheddar does not have a valuable place, if not to season pasta or as a substitute for fontina cheese.
